That Anna the little sister in my sister's keeper gets into a car crash after winning her court case and dies so Kate her dying sister ends up getting her kidney and living
In Hannibal Clarice and Hannibal run off to Argentina together
Hunger Games. Avoxes. They are people who rebelled or deserted the capital and were turned into slaves with their tongues ripped out. You see them in the first two movies but Pollux is the only name one in the 3rd and 4th. In the books Katniss knew and saw several of them before
The Scouring of the Shire: the four Hobbits leading a Hobbit revolution against a bunch of thugs when they get back from destroying the Ring.
The Shining: the hedges moving and playing a large role in the plot

The orgy in IT involving seven 11 year olds! Why was this even in the book? WHY?!?!?!?! Glad it was dropped from the TV mini series and the film
There's a lot of stuff in the book of American psycho that didn't make it into the film. Probably for the best as its very hardcore

The highway people roast a baby on a spit in The Road.
The most recent Dune movie when Paul killed Jamis. In the book, he cried because he never killed anyone before and to the fremen, this was a huge show of respect to "shed water for the dead." This little subplot helped endure him to the fremen from the beginning. Movie, no tears.
In the book Jaws, Hooper has an affair with Chief Brody's wife and the shark eats him when he breaks into his shark cage.
In the Shawshank Redemption book, the guy that was supposed to help Dufrane reveal the truth was not offed but sent to another facility. In the end too, Red was on his way to look for Dufrane, it didn't say if he made it there or not.
"Starship Troopers" has little to do with the Bugs and much more to do with becoming an adult and citizenship.
Tom Bambadil in Lord of the rings
Paul Bäumer returns home during the war, on leave for several days in the book form of All Quiet on the Western Front.
